I made candied pomelo peel today. :D

It's easy. First you wrestle the gigantic citrus open, with much swearing.
Then you scrape off the majority of the pith from the peel, and slice it into pinky-width sticks or smaller, hopefully with minimal swearing.
Put the peel pieces into a saucepan and cover with water. The cookbook I looked in when I first made these said to boil them 2-3 times to draw off the volatile oils. I only boil them once, because I like those oils.
Drain.
Dump liberal amounts of sugar over the peel, pretty much coat it in a thick layer. Put in just enough water to get all the sugar wet.
Cook over a medium heat, stirring constantly. It is very important to attend it at all times, because we wouldn't want a repeat of the Sekanjabin Incident*, now would we?
Eyeball it, add more sugar.
Keep stirring, the peels really will suck up all or almost all of the sugar.
Place on a cookie sheet on waxed paper to dry.

(*Electric stoves should absolutely not resemble gas ranges.)

On an unrelated note, I had my mid-quarter conference with one of my professors today. I have mixed feelings. : /

I got a few of a new fruit today- they are a cross between a tangerine and a kumquat. One bite has convinced us they are MADE to be candied, 'cause biting into em is about the same effect as a chiropractor!!!

Tangerine + kumquat? I think I'm in love.

Citrus anything, is one of my favorite fruit groups!
